The Acquavite “Clos St. Hilarie” Capovilla is one of the finest spirit Capovilla collection. Produced from the Pinot Noir grape marc of Billecart-Salmon's Le Clos Saint-Hilaire vineyard, tasting it reveals a rich and strong flavor to the senses, a real fruity pleasure. The chosen raw materials are notoriously the best by Capovilla, who has made long researches and friendships along his Bel Paese and abroad, as in the case of that spirit. In fact, since 1950 Billecart-Salmon is one of the greatest producers of Champagne: their Pinot Noir vineyards are planted in a “terroir d'exception”, whose soil's porosity and biodiversity are carefully protected and improved through ancient working methods. Located near the family maison in Mareuil-sur-Aÿ, in the Champagne region, the grapes of Billecart-Salmon are the “meilleure expression” of artisanal techniques and choices dictated by love for their terroir. On the other hand, the activity of Capovilla began thirty years ago, after having still worked in the wine field in the main materials industries as a mechanic: he is a true expert both of the mechanical production's aspect and the purely artistic one.
