Prosecco Treviso 'Settolo' Extra Dry Collavo

The Azienda Agricola Fratelli Collavo born from the desire of three brothers, Mark, and Massimo Mauro to continue the work started in the 60s' by the Father Caesar. Five acres are worked by the brothers Collavo, of which nearly three vineyards, about one hectare in cereals in rotation and the rest permanent pasture and woodland, which brings forward an approach to sustainable farming in an environmentally, trying to preserve biodiversity the surrounding habitat which provides balance and beneficial effects is inevitably in their vineyards. They have tried to recreate the fertility of soil that years of intensive cultivation had depleted, so they strengthened the plants, making them more resistant to the attack of pathogens and protecting the surrounding habitat. In winemaking they apply the same principles in the vineyard: grape harvest by hand, the grapes are pressed immediately to contain the bacteria, this allows to minimize the use of sulfur dioxide and then left to ferment with their indigenous yeasts. A production that follows nature in all its stages, from the vineyard to the bottle, and that gives us a fresh and crisp sparkling wine, with intense aromas and a true and wonderful drinkability.
